The Beauty of Bitter | Cookery Masterclass with Alexina Anatole

Sunday 8 February

Join food writer, chef and presenter Alexina Anatole in this masterclass on flavour and understanding how to harness bitterness to make your food delicious and moreish. In the masterclass you will have the opportunity to work out if you're a super super taster, take part in some experiments to understand how the five tastes (bitter, sour, salty, sweet, umami) interact with each other and then get into making a range of vegetarian recipes that incorporate bitter flavours such as coffee, grapefruit, bitter leaves and tea. By the end of the class you’ll have a better understanding of your own palate and will have learnt some skills that you can take forwards with you into the kitchen.

Example recipes
Mushroom, three cheese & coffee quesadillas
Burrata, radicchio & pangratatta
Curried corn fritters with grapefruit dipping sauce
Bitter greens borek
Winter tomato &  lapsang souchong salad

Open to all levels of skills and interests.  This class is suitable for Adults 18 and over.

*This class is part of our hands-on monthly masterclass cooking sessions, which focus on specialist topics or advanced cooking techniques.  Sessions are usually on Sunday and held in the Garden Museum’s new food learning studio. Each class is 3 hours, and will include tastings or a full meal eaten together depending on the course
